We bought the Palladian Villa, Stratton?s, in 1990 to indulge our love of great company, food, wine and this beautiful part of the county, The Norfolk Brecks. From day one our guiding principle has been quite simply to source and prepare the fabulous seasonal produce on our doorstep, real food with true flavours. The unique climate of the Brecks, it?s the driest part of Britain, yield some interesting crops from asparagus to blueberries. They both thrive in ericaceous soils and the landscape was formerly one of open heath land more recently forested in the 1920?s to provide a sustainable timber reserve for the country.
We want you to experience the Brecks we know from the forest paths and bridleways which can be found within Thetford Forest, the largest lowland pine forest in Britain to the great open spaces dominated by heathland and agriculture where you can quite simply breathe in the Brecks, to our scrummy plates offering up all our small local producers have to offer; fabulous local cheeses, heathland honey, ales from the micro breweries, venison, wild mushrooms and organic and free range meats.

Environmental impact
To reduce our environmental impact via careful monitored energy use, the management of water, washing and cleaning, waste reduction, ethical & environmental sourcing of all key ingredients to create our products, strong encouragement to use the outside environment for healthy recreation without a car in a responsible manner. Landfil waste has consistently run at 2% or lower for the last 5 trading years despite significant business growth.
In 2008, 200,000litres of waste water were harvested for re-use within the business, a third of the hotels total use, enabling standing water charge rebate and ?1000 worth of salad crops to be grown watered solely from this source.
An awareness and minimisation of sound and light pollution on the site.
To act to impact on climate change. Guests arriving by public transport are given a 10% discount. Likewise, a bonus scheme for staff relating to environmental performance has added to the hotels commitment to the environment.

The town of Swaffham is recognised within the European Community as an area suffering from social and economic deprivation following the decline in agriculture, and has such has attracted regeneration funding. The business has an audience of spending visitors and seeks to influence their ?buying habits? by using and highlighting local products, arts and sites of special interest. Using the restaurant to showcase our regional food by extensive information regarding provenance or the bespoke commissioned projects from local artists and craftspeople with support information including the briefs given to them, creates buying interest.

World Travel Awards was established in 1993 to acknowledge and celebrate excellence in the world's travel and tourism industry. With thousands of votes cast by travel professionals from 183,000 travel agencies in over 160 countries across the globe, winning a World Travel Award has become one of the highest accolades a travel product can receive.
Nominations are based on the previous year's voting
